I like to do it on the grill to medium-rare. Salt and pepper it first and then start it on a good, hot preheated grill — gas or charcoal — to sear it. We serve steak with a chimichurri sauce, also called a salsa verde, with herbs like parsley, tarragon and cilantro mixed with garlic, oil and a little lemon juice or other acid. You can make it with pretty much any green herb. We have a mint salsa verde on the menu right now.”
